Background:
Alana Peckham was born and raised in Vancouver.  She studied at the Dubrulle International Culinary Arts institute, earning her Culinary Certificate in 2002 and Pastry Certificate in 2003.  After graduation she worked at top Vancouver restaurants Feenie’s, Lumière, and CRU.  She joined Hart House in April 2012, bringing both experience and enthusiasm to her new position. Chef Peckham has contributed to Vancouver Cooks and competed in the 2011 Gold Medal Plate competition in Vancouver.

Philosophy: 
Chef Peckham says that her cooking style, while firmly grounded in the traditional French culinary techniques she learned at Dubrulle, is also influenced by her cultural heritage as a Chinese Canadian.  Her culinary goal for every dish is to achieve a harmonious balance of flavours.  She is known for her creativity as well as her longstanding commitment to using only the freshest and best ingredients.  Working at Hart House gives her access to the fundamentals for great cuisine, as the restaurant has close relationships with local suppliers and an on-site herb garden.  
 
Signature Dish: 
Daikon, Scallion and Potato Pancakes.

Buy local and fresh. Choose local over organic if organic has been farmed from somewhere far away.
