The Inside Dish: Indian railway express

For anyone who has travelled through India, there is no other way to go than by rail.
Every station is packed with hawkers selling all sorts of culinary delights.
Vikram Vij of Vij’s restaurant fame, has teamed up with Gourmet Syndicat to replicate the Indian railway experience but this time on the streets of Vancouver.
Vij, who hails from Amritsar, India, an important railway stop in the country’s northwest province of Punjab, takes inspiration from railway cuisine across the vast expanses of the sub-continent.
His food-truck, Vij's Railway Express, serves tantalizing dishes that he has coined as 'curry art in motion'.
Have a visit to his station on West Georgia street and you will find daily features on the ever changing menu which include Jaipur curry bison, Lucknow lamb kabobs and Goan spot-prawn curry.
Vij's Railway Express also serves traditional Indian beverages such as Kashmiri chai tea and blueberry lassi - the lassi comes in a plastic bag and straw, tied with a string.
For those patrons worried they may not be able to manoeuvre a sip out of this bagged drink, fear not, because Vikram Vij himself is there to assist each customer with their questions and recommendations.
Vij is known to walk up and down the food truck line up handing out free samples of chai tea and spicy cassava fries to eagerly waiting guests.
With Indian music pumping from the speakers, the scent of incense wafting out of the big blue truck truck and personalized service Vij's Railway Express is more like a sensory trip through India without even boarding the train.
