Restaurant Review: Trilussa Pizza & Pane

People are less familiar with Roman-style pizza. Similar to Neapolitan, Roman-style pizza also has a thin crust, although it tends to be crisper with a more uniform thickness throughout. The oldest Roman-style pizzeria in Vancouver is Trilussa Pizza & Pane.

When ordering a pizza, you choose a 3 inch or 6 inch piece. They’ll heat them up in the oven. You can also order a whole pizza to be baked fresh. Trilussa also offers what they call cold pizzas. These are made from the same freshly baked, warm dough, but topped after cooking with fresh ingredients such as smoked salmon, fresh mozzarella, and greens.

I had a 3 inch slice of their Blue Cheese with Pear which was reheated. However, it would have been better if it was freshly baked. It was still tasty though. The blue cheese wasn’t overwhelming, and was balanced nicely by the sweet, slightly crisp baked pear slices. The pizza’s white sauce lent some creaminess. As for the crust, it was slightly crisp at the edges.

In their cold pizzas, I tried the Caprese featuring tomato, bocconcini, and greens. It also had a thin layer of tomato sauce on the bottom. This was my favorite of the pizzas we tried. The crust was still warm. But the appealingly chewy dough worked well with the fresh ingredients and deliciously gooey mozzarella cheese. It was a very simple pizza, but a delicious one.

I also tried the Vancouver featuring salmon and greens, which is one of their most popular pizzas. There was a thin layer of what tasted like miracle whip spread over the base. Its tanginess ruined it for me. I feel like a thin layer of cream cheese would have worked better.

Overall I quite enjoyed my experience at Trilussa Pizza & Pane. I’m definitely interested in returning to try more of their flavours.
