Spicy Steve's Recipe: Spicy Cucumber Salad

This is a simple quick and easy Thai salad that is sure to please. It combines the delicious flavours of peanuts, cucumbers, and cilantro in a light and refreshing dressing with just a hint of heat. If you are a vegan, substitute the fish sauce with light soya sauce.
Ingredients:
- 2 medium cucumbers
- 1 Tbsp sugar
- 2 Tbsp white vinegar
- 2 red chillies, minced
- 100 gm crushed roasted peanuts
- 3 shallots, sliced
- 1/2 cup cilantro (coriander) leaves, chopped
- 1 tsp fish sauce
Method:
- Peel cucumbers, slice in half lengthways and remove seeds with a spoon.
- Slice into 1/2 inch slices.
- Dissolve sugar in vinegar and toss cucumber in the mixture.
- Mix well with minced chilli, crushed peanuts, shallots, fish sauce and cilantro leaves.
- If you want it chilled, marinate for 1 hour in the refrigerator but leave out the peanuts until you serve.
- Serve and indulge.
