Spicy Steve's Recipe: Spicy Cucumber Salad

Spicy Steve

This is a simple quick and easy Thai salad that is sure to please. It combines the delicious flavours of peanuts, cucumbers, and cilantro in a light and refreshing dressing with just a hint of heat. If you are a vegan, substitute the fish sauce with light soya sauce.

Ingredients:

  • 2 medium cucumbers
  • 1 Tbsp sugar
  • 2 Tbsp white vinegar
  • 2 red chillies, minced
  • 100 gm crushed roasted peanuts
  • 3 shallots, sliced
  • 1/2 cup cilantro (coriander) leaves, chopped
  • 1 tsp fish sauce

Method:

  1. Peel cucumbers, slice in half lengthways and remove seeds with a spoon.
  2. Slice into 1/2 inch slices.
  3. Dissolve sugar in vinegar and toss cucumber in the mixture.
  4. Mix well with minced chilli, crushed peanuts, shallots, fish sauce and cilantro leaves.
  5. If you want it chilled, marinate for 1 hour in the refrigerator but leave out the peanuts until you serve.
  6. Serve and indulge.
