Gourmet to go: Salmon Supreme

Salmon-Supreme copyIngredients:

Lemon Barbecue Sauce:
• 2/3 cup Lemon juice
• 1/2 cup Hickory barbecue sauce
• 1/2 cup Butter (or hard margarine)
• 1/4 cup Finely chopped onion
• 1/2 tbsp. Brown sugar, packed
• Garlic powder, just a pinch
• 3 lbs. Centre section of whole salmon (with skin), cut lengthwise to backbone and opened flat

Method:
Combine first 6 ingredients in small saucepan.
Bring to a boil on medium. Reduce heat to medium-low. Simmer,
uncovered, for 20 to 30 minutes, stirring often, until onion is softened.
Makes about 1 cup (250 mL) sauce.
Brush salmon flesh with 1/2 of sauce.
Preheat barbecue to medium. Place salmon, flesh-side down, on greased grill. Close lid. Cook for 15 minutes.
Turn. Brush salmon flesh with remaining 1/2 of sauce. Close lid. Cook for about 12 minutes, without turning, until salmon flakes easily when tested with fork.

Cut into 10 equal portions. Serves 10.

Serving Suggestion:
Serve with wild rice and carrots for a “supreme” supper.
