Malaysian Style Salmon

Masak Lemak Chili Padi Salmon

INGREDIENTS
• Half an onion (large sliced)
• 10-15 fresh basil leaves (one stem)
• 3 cloves garlic
• 4 small red chillis
• 1 stem lemongrass (chopped)
• 2 pieces of galangal (slices quarter-inch thickness each)
• 2 pieces of ginger (slices quarter-inch thickness each)
• 4 tablespoons of oil
• 1 teaspoon turmeric
• 1 teaspoon black pepper
• 2 tamarind rinds (dried)
• 1 tablespoon salt
• 1 tablespoon sugar
• Can of coconut milk
• 600 - 800 grams of fresh BC farm salmon

STEPS
1. Add onions, garlic, chillis, lemongrass, galangal, ginger, basil leaves to blender. Add quarter can of coconut milk to get smooth blend.
2. Place blended mix into pot of heated oil. Let cook while adding spices (salt, sugar, turmeric, tamarind, black pepper).
3. Cook for 10 minutes, add more coconut milk to desired consistency.

Salmon preparation:
1. Grill salmon separately in frying pan, or grill. (5 minutes for each side)

Dish: Pour sauce over salmon and serve with basil garnish.
